How To Roast a Butternut Squash

It seems like a no brainer, but, really, what do you do with a gourd once you get it home? To make life easy, we've laid out the fastest and easiest way to get your squash on.

Butternut Squash 101

In our last post we  discussed the beauty and health benefits benefits of Butternut Squash in detail and encourage you to read all about it here.

Below are the five simple steps to squash heaven.

{PS: this technique works well for all varieties of winter squash.}

1. After selecting your Butternut Squash rinse it in the sink with either water or a mixture of vinegar and water. (We found that tip on Pinterest. Follow our boards for more helpful tips).


2.Take a chef's knife and split the gourd in half lengthwise. You should end up with two almost equal halves. Scoop out the seeds and strings to create a hollow opening on bottom portion of the squash.

3. Use 1-2 tbsp olive oil or coconut oil and coat the fleshy side of the squash (the bright orange side).

4. Place the two halves on a baking sheet flesh side down and roast in the oven for approximately 40 min. Timing varies by oven, but you can test for doneness by pricking it with a fork. It should be very soft at this point with a few brown spots on the skin.


5. Once tender, remove squash from the oven. Flip each half over, it should have a lovely carmelized coating on the top.

That's it. Pull up a chair your meal is complete.

For added fun you can scoop it out and: whip it, smash it, put it in a pie, chop it, add some salt and pepper (or any variety of spices), drizzle with oil...and you'll have a delicious hearty meal.
